Pata negra (帕塔内格拉) literally means "black hoof" in Spanish — it refers to the highest grade of ibérico ham from 100% ibérico breed pigs, free-range and acorn-fed in Spanish oak pastures. It's one of the world's most prized cured meats and the star of the live carving experience.
